2024 Fiddletown Sauvignon Blanc

During the 2024 harvest, I took stock of where Perch was and where it was going. Production was scaled back a bit, except for one wine; this one. These 40+ year old, own rooted vines in Ahwahnee very rocky loam soils in the Sierra Foothills produce a very special wine that continues to amaze me. This current release is no different.

The fruit is whole cluster pressed to a chilled stainless steel tank and left to cold settle for two to three days and then racked off its gross lees into neutral white burgundy barrels. Fermentation happens spontaneously which lasts upwards of three weeks, low and slow with constant care and encouragement. Once primary fermentation is finished, the wine is never racked and remains on its fine lees until bottling in the late spring or early summer, depending when malolactic fermentation finishes, which is encouraged. The wine is then filtered and cold stabilized two weeks before bottling.

I make this wine because I am inspired by classic and age worthy styles of American Sauvignon Blanc. I hope you enjoy it.
